Healthy Oatmeal Protein Cookie & Chia Seed Pudding

I cannot even remember when I baked last time... it would be last year or the year before...

Yes I am not baking kinda wife. (lol Sorry babe! )



BUT, since I have so much time at home now because of Stay-AT-Home order in Hawaii, I started baking. I never thought I would do.

I just needed to do something new to stimulate my mind and also I want to eat healthy instead of bag of Maui Onion Chips which is my favorite chips and I have 2 more bags as stock. lol



As I am writing this blog, I started smelling my neighbor baking cookies.

I was going to write a blog about the recipe for oatmeal protein cookie and green tea chia seed pudding I made the other day but now I am hungry and wanna eat cookies....so I decided to bake green tea cookie and ice green tea latte :)


I put a little too much green tea power this time and cookie tasted a bit bitter... lol I 1tbsp was enough... next time!



Here are recipes for Oatmeal Protein Cookie and Chia Seed Pudding.



𓇼Oatmeal Protein Cookie𓇼


Ingredients1

  • 2 cups oats

  • 1/4 cup protein powder (I use plant-based protein powder)

  • 3tbsp chia seed

  • 1 egg

  • 6tbsp unsalted butter (I think I am going to change this to coconut oil or banana next time to make it more healthy)

  • 1/4~2/1 cup organic raw honey

  • 1tbsp peanut butter

  • a handful or tow of almonds


How to make

  1. Preheat oven to 350 degrees.

  2. Use food processor o finely grind 2 cups of oats into flour.

  3. Combine ground oats, protein powder, softened butter, egg, honey, peanut butter, chia seed and mix.

  4. Add crumbled almond.

  5. Scoop Cookie into balls onto a cookie sheet with parchment paper.

  6. Slightly pat the cookies down with your hand.

  7. Bake for 10-15 minutes.



I just added green tea powder to this recipe today . 1tbsp would be good:)




𓇼Green Tea Chia Seed Pudding𓇼


Ingredients

  • 1 tsp green tea powder

  • Organic raw honey - depends on how sweet you want to make

  • 2tbsp chia seed

  • 1/2 cup almond milk


How to make

  1. Combine everything and mix in a glass cup


Ta-dah!!


After an hour or two, mix well since chia seed stays at the bottom of the glass cup.




Both are so easy, yummy and healthy! One cookie satisfies my belly because chia seed and protein powder make me full quick!
